The Indian Monsoon Malabar AA Coffee has a medium body with pleasant undertones, low acidity, and is an exceptionally smooth brew. The Monsoon beans have a thicker texture with a hint of wood in taste. It is very low acidity, thick and creamy, overly earthy style cup of coffee. There is a lot of sweet tones in this cup depending on the roast and one can taste a little hint of the natural processing soft fruit tones and classic Indian spice notes. India Monsooned Malabar is processed as the coffee cherries reach maturity and are harvested, the cherries are sun-dried until the flesh easily comes off by hand. Once dried, they are stored in warehouses with open walls and exposed to the gale winds of the monsoon season. Once saturate the beans absorb the moisture and sea salt from the nearby ocean. This coffee must be roasted and then allowed to rest for 7-10 days for best aroma and taste. We have found that this coffee is exceptional for cold brew coffee when roasted to full city plus. This coffee tastes great as a pour-over, auto drip, or espresso.
